Jakes Wheel Zucchini Pesto Griddle Cakes

Ingredients 2 Eggs 1 cup panko bread crumbs 4 cups shredded zucchini 1 5oz wedge Jakes Wheel Shredded 3 tablespoon pesto 2 teaspoons lemon pepper olive oil pesto cream sauce  ( separate recipe to follow )   Directions Grate zucchini and Jakes Wheel cheese, add all other ingredients and mix well.  Place about 1/4 cup mixture in fry pan with olive oil and cook on medium heat about 5 minutes on each side until golden brown.
